Than go to the Event Viewer - Security and look for Object Access

The following link has the details as to how the auditing for files/folders/printers can be done:

The link has instructions for Win XP professional edition, but the instructions are same for win 2003 server.
You need to remember three things:

1. The audit log appears in the 'Security Log' of the event viewer
2. Local Policies need to be modified for the same
3. Files/folders need to be enabled for auditing by changing their security settings.
